Signature flans
A flan is a French custard tart, a buttery pastry case filled with a rich, silky egg custard and baked until just set. Think somewhere between a custard tart and a cheesecake, but lighter, with a wobble in the middle and a caramelised top. Ours are made fresh in small batches, the traditional French way.
